基础知识-酒的颜色
酒的颜色是人们对酒的第一感官认识,一杯酒在我们闻到它的香气,尝到它的味道之前,我们首先看到的是它的颜色。酒的颜色十分丰富,白酒的无色透明、红葡萄酒的宝石红、白兰地的琥珀色、薄荷酒的碧绿等等,色彩缤纷,应有尽有。
从生产的角度来看,酒的颜色的形成有以下几条途径:来自酿酒原料。许多酿酒原料含有色素,这些色素溶人到酒液中,使得酿成的酒带有颜色。如红葡萄酒的酿造原料为红色或紫色的葡萄,这些葡萄的果皮里含有大量的色素,葡萄破碎、榨汁后连同果皮一起进行发酵,在发酵的过程中,果皮里的色素不断析出,溶入酒液里,所以酿成的红葡萄酒都呈宝石红色或深红色,酒的这种颜色就是由葡萄本身带来的。
酒在生产过程中自然生色。酒在生产过程中由于温度的变化,形态的改变从而改变酿酒原料的本色,这种自然生色现象是酒在生产过程中不可避免的。如白酒在蒸馏过程中,经过加热、汽化、冷却、凝结之后,改变了原来的颜色,呈无色透明状。一般情况下,自然生色现象只要不影响酒的质量,生产者是不会去改变它的。
